Healthy & tasty eating doesn’t always require a fancy kitchen and sometimes a microwave is all you really need to cook yourself a healthy yet tasty meal in under 15 minutes. This gourmet microwave recipe only uses ingredients that don’t require refrigeration so you don’t even need a fridge for this recipe. This stuffed mushroom recipe is vegan but since it uses quinoa you still get a complete protein. You can also top the mushrooms with some shredded cheese (if you have a fridge) and nuts/seeds to add extra flavor and texture.

To add more protein and reduce carbs : replace canned beans with canned lentils or make this vegetarian by adding 1 oz fat free shredded cheese such as cheddar or mozzarella.
Recipe:
Ingredients:
2 portobello mushrooms
40 g of dry quinoa
70 g of canned beans
70 g of canned yellow corns
1 small tomato chopped (never store tomatoes in fridges)
1 small lime haved
Salt, black pepper, garlic powder, and chili powder
water
Instructions:
1. In a bowl, add water to cover 40 g of dry quinoa and microwave on high for 5 min.
2. While the quinoa is cooking, chop up the tomatoes, drain the beans and corn, and wipe the mushrooms with a towel then put them on a plate.
3. Season the mushrooms with salt, pepper, and garlic powder. Once the quinoa is done, microwave the mushrooms on high for 3 min.
4. While the mushrooms are cooking, mix the quinoa with 70 g of canned beans, 70 g of canned corn, 1 small chopped tomatoe, juice from 1/2 lime, salt, pepper, chili powder, and garlic powder.
5. After the mushrooms are done, season one more time with salt and pepper. Top the mushrooms with the quinoa mixture. Put the remaining quinoa mixture onto the plate.
6. Season one last time with salt and pepper. Microwave on high for another 2 min then let the meal rest for 5 min before serving.
Enjoy! If portobello mushrooms are too expensive in your area, you can also purchase large white button mushrooms and make small bite sized stuffed mushrooms instead. Either way it is going to be tasty.

hello my lovely friends on the Internet today we are going to do something different instead of using my beloved oven and so are we going to use this little frame microwave a lot of times we may travel stuck in a hotel room it’s just a microwave and a mini fridge or you live in the dawn and you have a shared space and it’s just a microwave and so for this reason today we want to share a delicious stuffed mushroom that’s also vegan and that can be prepared rather fast and it’s gonna be Hardy and tasty and if you don’t how anyone they will not know it’s made from the microwave ready to get started so guys see this is the color for a final product um so much the smell of the mushroom thing with the line and so just it’s just such a balanced taste and just smell and the aroma and just the flavors all balanced out and so this is a vegan recipe but if you have some soy cheese or if you just have since she’s on hand you can make this a vegetarian dish by top with a little bit of shredded Parmesan cheese or mozzarella cheese to give it a little bit I’m sure it tastes a little bit maybe you shredded nuts to give it a crunchy texture so this is a complete protein because if you want a complete protein but you can also use other grains because rice and beans are complimentary protein so you can make this dish in under 15 minutes and you know if you look at this you will not guess this isn’t a from microwave so hope you guys enjoy this recipe and we post recipe videos every Thursday and we’re capping those every Tuesday so if you liked it please make sure to give them like click the like button share your comment and subscribe if you haven’t already and see you guys next Tuesday bye one so the angle so you’re gonna go
