A meal using up leftovers.

Grate up 200g of boiled potatoes( I had some cooked in the skin from earlier in the week), 200g of tempeh, add some frozen spinach and any curry spices you like. I used premade hot curry powder.
Mix well and smoosh it flat onto a wrap of choice, spray your pan with oil and put it on there filling side down. Cook on high until the edges get crispy. Turn the stove of, carefully pop a plate on top of the wrap and then smoothly flip the whole thing over. Don't try to flip it with a spatula, it will be messy.
Top it with veggies, yoghurt and chilli sauce. I would have like to put some green leaves on, but had none. Try to wrap it if you can, but I'm not very good at it.
The amount makes two chunky wraps about 420cal each.
It's mushy, crispy, crunchy, creamy and spicy! And leaves me with enough calories for a bikkie afterwards😁
