For those who follow me on IG, they know the story but basically I thought the pizza was excellent! Might be my favorite Roman style in Austin. The pasta had some kinks. They used pancetta despite the menu saying guanciale and the lasagna was pretty soupy. The owner was going around asking customers what they thought and I told him my critiques. He told me he has to cater to Americans so he purposefully makes things less authentic to suit different pallets. Hence the added bolognese sauce on the lasagna and extra cheese and the use of pancetta rather than guanciale. I told him I prefer the guanciale and Austin is lacking authentic Italian mom and pop cuisine. He offered to make me a couple of dishes and whipped up the porcini pasta shown and another rigatoni but with guanciale this time. The pasta dishes were so good! They reminded me of stuff I found in NYC. I gave some cash to the worker since he wouldn’t let me pay for the extra dishes he made. he says if you are in search of authentic pasta, ask for Tony or ask for your pasta the authentic way. I tried to convince him Austin needs more authentic Italian but he is worried he will go out of business. Poor guy.
