When I saw my supermarket had beautiful Pancetta (sadly no Guanciale), I decided to make Carbonara. The cheese counter was closed for cleaning and in the sealed cheese section they only had Parmeggiano Reggiano. Nonetheless, I kept on trucking with these substitutions and this is the end result!

(Please ignore the bit of egg on the counter. It's from the bowl I mixed the eggs and cheese in and I didn't notice it until after I took the picture)

    I think you could fry the pancetta more, it looks a bit pale. I would also add more black pepper, but that’s an individual taste.

    Looks good though, made me hungry!

    With my grandma I used to have parmesan and pancetta in my fridge almost on a daily basis. She just cook a “Carbonara” when she had fresh eggs

    Was it legit? No…

    Was it good? F@€k Yes!!!
