I just got a BGE minimax as my first BGE. I'm currently in our family cottage. Therefore I don't have any big green egg supply / other ceramic grill store nearby. convEGGtor is also somewhat expensive.

My plan is to cook a small brisket (1.4 kg, 3 lbs). But I think it would be best with indirect heat.

I bought a cheap pizza stone, that just fits inside the BGE on top of the inner ceramic ring. However, I suspect that just plonking it in there, on top of the rings in it's current size, will eliminate or hinder the airflow significantly. And won't create a whole lot of space between the stone and the rack.

How would you go about modifying said pizza stone to get the best results? Break it in half? Hammer some sides off it?

    Aside from the obvious airflow issues, Unless you have a way to raise the grid, That’s not going to work. You need an air gap between your stone and grid or it’s going to incinerate anything that sits on top of it. I highly recommend you call an audible and grill something fun instead of investing a whole day cooking something that is going to be terrible after all the work you out into it.

    You aren’t prepared to cook a brisket or anything indirect so enter at your own risk

    Did it work? I use my pizza stone that way, but I have one that is smaller (relative to my large) and a ring I put it in lower. I use double pizza stones to smoke turkey etc – all you need is something to raise the pan off the stone. I use the feet that came with the egg, but at a friend’s we used some metal shish kabob sticks on their side.
    One of the great things about using the Egg is it is easy to improvise.
