    766g bread flour

    161 g whole wheat flour

    19g salt

    685g water

    169g levain

    10hr levain, 4hr bulk, 10 hr fridge proof

    450º – 20 min lid on, 30 min lid off – cast iron behemoth

    I find this bread kinda tough, and wish the holes were bigger -i realize its more of a sandwich bread – but good luck with your jaw. Super tasty regardless especially grilled with evoo.
