•1 egg
•1/3 cup greek yogurt
•1/3 cup milk (i used cashew)
•2/3 cup oat flour
•1 scoop (about 30g) vanilla protein powder
•1-2 tbs monkfruit sweetener
•cinnamon to taste
•lemon zest to taste
•juice of half a lemon
•1 cup blueberries
•baked at 350 for 20-25 minutes
~this made about 5 muffins for me, 550 cal and about 48g protein for the whole recipe if done in a single pan as a loaf.
