Lunch — 1) Lemon Pesto Chicken Pasta Salad, 2) Freezer Pork Breakfast Sandwiches & Chickpea Salad
Plus some veggies & fruits for snacks throughout the week. Breakfast will last the whole week too, and lunch is four day’s worth!

Freezer Breakfast Sandwiches — English Muffins, pork patties, cheddar cheese & egg. I whisk the egg and add chopped veggies + seasoning, then pour in a pan and bake at 325 for 10 minutes.
Chickpea Salad — https://www.eatyourselfskinny.com/chickpea-and-tomato-salad/#wprm-recipe-container-15394 (I ignore this dressing and do a lemon vinaigrette instead.)
Lemon Pesto Chicken Pasta Salad — Pasta of choice 350g, Shredded Chicken Breast x3, Cherry Tomatoes sliced 400g, a whole bunch of chopped scallions, 3/4 pesto sauce. Just mix all together and you have a hearty meal. Good for 4 servings.
How is the chickpea salad on day 3/4? I can’t seem to have any luck with keeping similar salads decent by that point
