    This week I had 3 small briskets I wanted to do and had a weird day. So I ended up running them at 300 degrees, smoke 10 on my camp chef then dropped to 250 when they were 165, once again weird day, and they turned out to be the juiciest brisket I’ve ever made. Briskets are weird.

    That looks great.. I usually smoke anywhere between 220/240.. wrap at 165 pull at 203
