We prep both full lunch & dinner options, but also components like diced onion, peppers, broccoli, potatoes, etc. so that breakfasts are quick and fresh. At the end of a long day of prep – which I usually enjoy doing – I love to go visit the fridge and just admire all of the colorful containers, and the peace of mind I have going into a week prepared to eat healthy!
