Good evening!

I'm searching for new ramen toppings because I ran out of ideas.
I mostly use chashu, marinated eggs, pork soboro, menma, spring onions and sometimes bean sprouts (stir fried with lard). Wood ear mushrooms don't give much flavour imho.

I tried the recipe for the pickled shiitake from "lets make ramen" and it was way too sour for my taste.

Any recommendations? Really hard to find new toppings tbh.

    I find wok fried vegetables like bok choy are nice, especially if you can get that char flavour.
    I also found the shiitake mushroom from “ let’s make ramen” very sour, Havnt tried to make them again.

    Damn dude that’s a beautiful bowl of ramen! To your question I like shiitake or oyster mushrooms that were sautéed in butter, kim chi, and corn.

    Cut carrots into matchsticks, blanch them and then soak in a mix of soy sauce, yuzu and rice wine vinegar. Add to ramen.

    Nori, ofc. Wood Ear Mushrooms are best with non shoyu imo. Otherwise they tend to clash / feel same-y. Honestly mushrooms in general imo.

    If your eggs aren’t marinated always worth a shot.

    Idk I like a simple Ramen with less is more toppings personally.

    Julienned negi whites that have been soaked are nice.

    Very finely diced red onion can be nice in a shio, probably not the most popular option.

    Tofu mince seasoned and cooked well is nice as well as a spicy pork mince. Bonus points for a spicy pork miso topping in my books.

    Toasted sesame more of a condiment but I’ll leave it.

    Yeah idk worlds your oyster on this one.

    Roast tomato. Blanched spinach. Poached Chicken. Wood ear muchtooms. Blanched bean sprouts. Seared spam. Micro greens.

  8. idk if anyone had said it before but you could add pickled ginger, corn and cabbage as well.
