    Tell you what it is. It’s my perfect looking steak. I know all the steak guys are gonna be like overcooked.

    But I ask for medium when I order steak and that’s a perfect steak for me.

    Thing is color differs from steak to steak. I base my doneness on firmness with the folded finger trick. I do temp, but I only have an instant so i base when I temp it by firmness. Super fatty is gunna take longer to render than sirloin, base your doneness on bounce, then temp, for the best results imo.

    I would call this between medium and medium rare. Very slightly more done than i like, but I would still be happy with it.

    Looks medium to me and I’d eat that evey day of the week no complaints.

    Anything other than Bleu and well done is good to me.

    My go to is medium rare as I’d guess is a lot of people’s.

    Don’t get the fuss over medium or really even medium well as long as it’s still somewhat tender and tastes good.

    Medium. How could someone think this is raw? Raw would be if you just opened the package and started eating the uncooked steak.
