Didn’t go so great 😂. Had a six lb flat and a 4 lb Chuck roast. Boated the brisket and wrapped the chuck after 3 ish hours. Pulled the chuck roast after maybe 5.5 hours and the brisket around 7. Rested in the oven for about 3 hours at 150.
The chuck roast was drier than the Serengeti. I don’t know that it even ever had a chance. The brisket was a different story. It was about 87% of the tenderness I wanted, but not a lot of juice. I couldn’t tell if it was overcooked or under cooked. It was also a bit bland for my tastes. Although I wonder how much of it had to do with being a choice flat.
Anyhow, not my best work, but passable. I don’t have much experience with brisket, cooking or eating tbh. Anyhow Beef ribs next I think.
