This Beef Stew is a slow cooker version of the classic comfort dish. Tender fall apart beef chunks cooked with potatoes and veggies and simmered in a hearty beef broth! Just toss everything into a slow cooker and you have a delicious dinner perfect for a Sunday evening or a weeknight meal!
Beef Stew
Ingredients
2 lbs beef chuck roast, fat trimmed and cut into 1 inch pieces
3 cups beef broth
3 tablespoons tomato paste
2 tablespoons Worcestershire sauce
5 garlic cloves, minced
1 onion, diced
4 carrots, sliced into 1/2 inch pieces
1-2 potatoes, peeled and cut into chunks
1 cup frozen peas
3 tablespoons flour
Directions
Season beef well with salt and pepper. Heat oil in a pan over medium high heat and sear beef on both sides, about 2 minutes per side.
Transfer meat to a slow cooker. Stir in beef broth, tomato paste and Worcestershire sauce.
Add garlic, onions, carrots and potatoes. Season well with salt and pepper and stir to combine.
Cover and cook on high for 6-7 hours or low for 9-10 hours, or until beef is fork tender. Stir and check if additional seasonings are needed midway through.
30 minutes before it’s done, mix flour with 3 tablespoons water. Whisk in 1/2 cup of cooking liquid (this will prevent flour from clumping). Stir mixture into the slow cooker along with the peas. Cover and continue to cook for another 30 minutes.
