Has anyone ever meal prepped Chicken Picatta? How did it turn out?
I was thinking about making this recipe. Any thoughts?

I have not tried this as a meal prep! But just a note as someone who has eaten a lot of leftover chicken picatta, the sauce does not compare to fresh as it will separate a bit. Definitely still edible on days 4/5 I usually just lay the breast over a bed of rice or pasta and pour a small amount of sauce on top rather than making use of the whole pan of sauce. & then just have the veg in another compartment or container.

The best part is having the chicken picatta with a salat on the side, so don’t forget to meal prep that

Yes, I do often. Most often I do the crock pot preparation. I skip dredging the chicken through flour. Once its cooked I let it cool and divide it in individual portions.

I’ve done it recently using the recipe from Downshiftology. I’d use less Parmesan in the dredging mixture, but I thought it kept and reheated well for the next four days. I reheated the chicken in the air fryer by itself because I’m kind of picky about reheated meat, and I just microwaved the amount of sauce I used each night on its own. It tasted good and emulsified just fine when reheated.
