Ingredients:

  • 1 cup peanut butter (natural, unsweetened);
  • 1/2 cup granulated erythritol (or another keto-friendly sweetener);
  • 1 teaspoon vanilla extract;
  • 1/4 teaspoon baking soda.

Step-by-step:

Mix all the ingredients, form the cookies and bake for about 10 to 12 minutes (350°F (175°C).

Let the cookies rest and… That's it!

    My mom used a similar recipe when I was growing up but it was 1 cup of pb, 1 egg, 1 cup sugar.

    In this case you would sub the sugar but the egg adds protein.

    This is the exact ratios we use except no baking soda.

    My wife also makes a similar recipe for peanut butter bars made in a shallow casserole dish with additional peanut butter flour and some other ingredients, and dark sugar-free chocolate solidified on top.
