White Wings for supper

When I was a young man, I was lucky enough to live down the road (30 miles) from the famous Las Casas restaurant in Temple, TX.

We haven’t made these in years, but they sounded good – chicken breast cut into 4x / stuffed with Monterey Jack + pickled jalapeño/ wrapped in bacon. I like them with a tortilla and guacamole salad.

Hopefully they turn out fine. We didn’t wrap the bacon tight enough by the looks of the first turn.
