How quickly can you say Protein Pesto Pasta? 🤓 This dish will be ready even before you say it! ❤️
I LOVE a good pesto sauce but this red version (called pesto Rosso) is my favourite. Made some modification by blending in my dearest paneer (like always) and some spinach for some extra fibre!
I also used @pinkharvestfarms 100% Chickpea Macaroni for the added protein and it was 🤌🏼❤️…
Ingredients (serves 1 – 426 KCal per serving)
50 g cooked protein pasta (use code PHFXAATHIRA on @pinkharvestfarms )
1 tsp chilli oil /chilli flakes
1 tbsp coconut milk
For the pesto
1 tsp olive oil
4-5 cloves garlic
2 Sundried tomatoes (you can dry roast a few tomatoes if you don’t have this!)
Salt to taste
30 grams paneer/tofu
1 tbsp nutritional yeast (can replace with grated cheese)
4-5 nuts of choice (I used a mix of almonds and pistachio)
Handful of basil and spinach leaves
1-2 tbsp cold water or ice
Method
1. Make the pesto by blending together listed ingredients.
2. Add it into a pan with some water.
3. Mix in the chilli flakes/oil – season with more salt if necessary.
4. Add the pasta, coconut milk and mix well.
5. Garnish with some more basil leaves and serve HOT! ❤️
