I'm having shoulder surgery next week and my family will be leaving for vacation a few days after my surgery.
My wife prepared 30 chicken, rice, been and veggie burritos for the freezer. Something I can eat with one hand and leaves no dishes to clean.

Burritos are always great for on the go.
800g dried black beans
800g brown rice
750g boneless skinless chicken thighs
4 bell peppers
4 brown onions
3 large carrots
300g Cheddar cheese grated
15g fresh cilantro
Tortilla shells
Tomato paste
Diced Chipotle pepper in sauce
Garlic powder
Onion powder
Chili powder
Ground cumin
Salt
Black pepper
Olive oil
We soaked the black beans overnight with enough water to cover, some salt, onion powder, and garlic powder.
Cooked black beans and brown rice per normal methods. Chopped peppers, onions and shredded carrots. Sautéed each vegetable separately in olive oil until soft. Then, added all veg, tomato paste, and diced chipotles back to pan until mixed well and paste was a bit toasted. Add some chili powder, ground cumin, and black pepper
Cooked chicken thighs in a large pan with a bit of olive oil (salted them lightly in advance), then cut into pieces.
Mix veg, rice, beans, chicken, cheese, and ciilantro. Taste and adjust seasoning as needed.
Scoop into tortillas, wrap, and then wrap in foil.
Looks bomb! Microwaving the tortilla before wrapping makes a big difference btw.

Continue for some unsolicited advice:
If you do not like to wear a shirt at home, I highly suggest a compression sleeve for your arm, the crease in your elbow will get chaffed being in the sling. Also recommend wearing a tank top or keeping something under your armpit, that will also get chaffed. Get lots of pillows since you will have to sleep in the upright position .

I thought this said pre-sugary, like you’re responsibly having something healthy before a dessert bomb. Good luck in surgery!

Looks delicious! Hopefully you have some sauces you can have with it, though. 30 meals worth of burritos sounds like it’d get tiresome after a while.
