This is my 6th loaf. Tell me how I'm doing! Feel free to let me know if/how I can improve. My only issue so far is that I find my loaves aren't super tight when scoring, but I don't mind the 'artisan' look of a more natural split.
50g active starter (fed around 9am)
325g warm water
500g AP flour
10g salt
Mix all and let sit for 30min, mixed around 4pm. Stretch & fold, then another 3 rounds of s&f every 30 min. Woke up at 5 am 🥴 and shaped. I don't have a banneton so I use a colander with a fresh, clean white flour sack towel with a light dusting of flour. Put in the colander and into the fridge once shaped. Preheated my oven & Dutch oven at 8am and once preheated to 450°F, transferred my loaf to parchment paper with a light dusting of flour and baked. 20 min lid on, about 22 min lid off.
