Always wanted to smoke oxtails but never have done it.
I used a combination of Jamaican oxtails / Korean braised ribs recipes.
Applied rub on the oxtails and spare ribs and smoked them between 275-300 for almost two hours. While that was going I cooked down some veggies (carrots, garlic, celery, red/yellow/orange peppers, onions, mushrooms) with 1/4 cup balsamic vinegar, 1/4 cup Worcestershire sauce and 1 cup red wine and 3-4 cups of beef broth. Added a little mushroom seasoning, gochujang, better than bouillon, soy sauce, black pepper, and brown sugar to taste.

Put them all together in the Dutch over and covered with foil and smoked for another 3-4 hours around 275-300.

I scooped some of the fat off before serving over some rice

Not bad for the first time and the kids loved it.
