Lemon Ricotta Pancakes

    🌿 Ingredients:

    * 1 cup ricotta cheese 🧀
    * 1 cup all-purpose flour 🌾
    * 1/4 cup granulated sugar 🍬
    * 1 tsp baking powder 🥄
    * 1/2 tsp baking soda 🥄
    * 1/4 tsp salt 🧂
    * 3/4 cup milk 🥛
    * 2 large eggs, separated 🥚
    * 2 tbsp lemon juice 🍋
    * 1 tbsp lemon zest 🍋
    * 1 tsp vanilla extract 🌿
    * Optional: powdered sugar and fresh berries for serving 🍓🍇 #FreshIngredients

    🥄 Directions:

    1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    2. In another bowl, combine the ricotta cheese, milk, egg yolks, lemon juice, lemon zest, and vanilla extract. Mix until smooth.
    3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; the batter should be slightly lumpy.

    🍳 Cooking:

    1. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
