    I made some chicken shawarma plates for meal prep this week. Here is my recipe for the chicken:

    Shawarma Marinade:

    * 1 large tray of boneless skinless chicken thighs ~ 4.5-5lbs
    * 10 cloves of garlic
    * Juice of two lemons
    * Two tablespoons of ground cumin, coriander and cardamom
    * 1 tablespoon of smoked paprika
    * 1 tablespoon of spicy paprika

    Marinade overnight and cook it on a cast iron pan or griddle to get the right amount of browning and crust.

    Fatoosh Salad:

    * 1 head of leaf lettuce
    * 1 pound of cherry tomatoes 
    * 1 medium red onion

    Chop up vegetables into small bite size chunks

    Fatoosh Salad Dressing:

    * Juice of one lemon
    * 1 grated cloves of garlic
    * 1 teaspoon of sumac (substitute with 1 tablespoon of lemon juice if not available)
    * 1 teaspoon of sugar
    * 3 tablespoon of olive oil

    Whisk together and dress salad.

    Yellow Pilaf Rice:

    * 2 cups of basmati rice
    * ½ teaspoon of turmeric
    * 5 cloves sticks
    * 5 cardamom pods
    * 1 stick of cinnamon
    * Salt to taste
    * 3 cups of water (if cooking on stove)

    Mix together ingredients and cook in a rice cooker or on the stovetop.
