Theres a first time for everything. Good on you for trying. I work in a restaurant and we smoke salmon in house. Ngl, we would toss this. I’d pull this off 20⁰ lower and rest to 145. At home tho, game on.

You might want to try a lower temp for removing the fish from the heat. I typically cook mine to 127⁰. Americas Test Kitchen suggests cooking wild salmon to 120⁰ and farm salmon to 125⁰ and let it rest. It’s a game changer for texture and flavor. Yours looks amazing though!

I don’t particularly like salmon, but I cook it for the family. But that one I would definitely try, I prefer it to well cooked like yours.
