    You really opened yourself to the jokes, and Reddit will never disappoint on that front. 😁 I went to Jamaica once on a cruise – this recipe is spot on to what I had there. I get lots of compliments on it. I sub Habanero for the Scotch bonnet, and pimento wood is expensive, so I use pecan, but it’s really good. I use the … … mulch from the marinade as kind of a poultice to keep the chicken moist while smoking (I dont use the oven method, and smoke it kinda slow in a smoker that doesn’t have a separate smoke chamber.) and keep some that hasn’t been exposed to the raw chicken as a garnish. Can also definitely recommend the recipe for Festival bread (think sweet Hush Puppy).
