I followed The [Perfect Loaf’s beginner sourdough recipe](https://www.theperfectloaf.com/beginners-sourdough-bread/) and used a very active starter I keep, which is over 10 years old. I have only baked one other loaf of sourdough and didn’t really ‘try’ to learn or be very involved back then. I got lucky with my kitchen temps when I was baking, as it was right around 75 inside. Only other issues I might have had (though I don’t think they majorly affected the outcome) are putting in a bit too much water for the autolyse and proofing overnight in glass bowls with dish towels, which kept in more moisture than I might have needed. But the bread came out amazing. I’m open to any tips or suggestions any of you might have!!
