Hi, I’m making Stella’s hot chocolate mix for the first time. Where I live I couldn’t find any good white chocolate with the cocoa butter percent she recommends, but saw a bar of white chocolate from Lindt that was 29% cocoa butter so decided to grab that.
When I got home I realised it’s not plain white chocolate, it’s the Lindt “Lindor” type with the slightly oozing/soft centre. Will this still work? My other option is a generic block of white chocolate with 25% cocoa butter, but I’ll have to go back to the shops to buy it.
Cheers

I’m not an expert but love hot chocolate & I would maybe add the white chocolate truffles (the lindor branding is just what people normally call truffles) then see how the texture is and have some heavy whipping cream or double cream on hand to add a splash (tablespoon or two) at a time for more fat/liquid.
I would double check that the ingredients for the truffles don’t also include any oil ingredients high on the ingredients list because that could mess things up and is a pretty common additive to chocolate in America that I’m wary of even high-end brands having.
