I’ve promised fried goat cheese to Stephanie and today is the day. You will be so surprised at how easy and delicious it is to make. There are very few ingredients along with the salad. Make the pork schnitzel, (link below) which only takes a few minutes, and you have a delicious weeknight meal for your family. Recipe below.

Ingredients:
baby spinach
strawberries, sliced
maple glazed pecans *
balsamic salad dressing *
goat cheese, sliced 1/4 – 1/2 inch thick *
2 egg whites
1 cup panko breadcrumbs
oil

Directions:
Place goat cheese in freezer for 10 minutes.
Layer baby spinach, strawberries, and pecans on a platter and set aside.
Beat egg whites, sprinkle panko on a separate plate. Slice goat cheese. Heat oil in skillet. Dip cheese in egg whites and then coat in panko. Gently place in hot oil. Fry a few at a time until golden. Remove from frying pan and place on a separate plate. When all have been cooked, let them cool for 5-6 minutes. Scatter fried goat cheese over spinach and strawberry salad. Drizzle with balsamic salad dressing.

*use sugared pecan or nut of your choice. If allergies are involved, leave off pecans.
*other choices of salad dressings are Italian, or oil and vinegar.
*freeze goat cheese 10 minutes before slicing

  7. WE LOVE goat cheese, here in michigan we love fried brie, we use flour we seasoned, egg wash then bread crumbs, i think the flour helps with the stickiness, goat cheese is easy to get here I will have to have the kiddies try this one, TY
