I made my first loaf after watching tons of sourdough videos online. I’m pretty happy with how it turned out! The recipe is a mashup of multiple recipes and based on what I had on hand.
Recipe:
- 100g active starter
- 375g water
- 400g all purpose flour , 100g light rye flour
- 12g salt
I mixed the starter and water together first. Then mixed in the salt and flour. Let it rest covered with a damp cloth for 30 minutes. I did 2 sets of stretch and folds and 2 sets of coil folds, each 30 minutes apart. After the last set of coil folds I let it bulk ferment for 4.5 hours. Then I shaped the dough. I dusted it with rice flour and put it in a colander lined with a damp tea towel and covered it with the same tea towel. It cold-proofed in the fridge for 15 hours. Scored the bread. Preheated the Dutch oven at 500 for 1 hour. Then baked with the lid on and a few ice cubes at 450 for 20 minutes. Then baked with the lid off at 400 for 25 minutes. The crust was still too light, so I raised the temperature to 420 for another 10 minutes to get a darker crust.

As far as first loads go, this is as good as it gets. It might need some fine adjustments to whatever you like best but from what I can see, it’s pretty much perfect.
