Al Pastor rub, mustard binder, 225f from 10pm to 9:45 am when one probe hit 203 for 5 minutes. Then it rested covered in cooler for 2 hours. Didn't wrap it bc I didn't want to get out of bed at 6am. Going to make tacos later with a simple fresh onion/cilantro/lime relish. I used Apple Lumberjack pellets. The taste on it is amazing!
