These are my first sourdough bagels, any tips/constructive criticism?

4 1/5 cups flour
1 1/3 cups water
1 1/4 tsp salt
1/3 active starter

Kneaded the dough together, covered with a wet towel for about 40 mins, kneaded again, mixed in whatever additives and left overnight covered with cling wrap! Shaped the dough into balls and let rise for about an hour, then made the holes and shaped the bagels, let them rest for about 20 mins, and boiled them for about 30 seconds each side in water and tsp of honey mixed in.
Baked for 24 minutes at 425.

  1. I like the roll the dough and attach both ends. It helps the home stay open and not close!

    Your first bagels look a lot better than my first (and only) batch did! Nice work!
