300g water 450g bread flour 10ish grams salt 100 grams starter
Mixed together 3 sets of stretch and folds 30 min apart. Bulk ferment on the counter around 9 hours, cold ferment 8 hours.
I moved apartments where I used to do the exact same, but I never got an ear.

I wonder if your oven in the new place is more true to temperature, compared to the old one? congratulations, looks like a delicious loaf!
I bake in either an old rental generic GE electric stove/oven that’s probably 20 years old or an 8 year old Wolf gas convection oven and its wild how much adjustment between the 2 lol
