Storms tonight so i got the generator on standby in case the power goes out. So I'm smoking two 12lb briskets tonight and these are the first on the Recteq. Should I divide the point and flat so i can pull the flat first and dont overcook it or just leave it whole and wrap it when the flat is done?

    Maybe for a different thread…but while we are here….I would not plug my grill directly into that generator. I would want the power to go through an inverter to protect from dirty power.

    That’s just me though….

    Before all this, how often does your power actually go out?

    Your brisket could probably survive a short power outage, not more than an hour or so, but this depends on your temp window too.

    I recently had a nightmare scenario where mine hit 160° before the pellets bridged and shut the machine down. Ambient temps for the cook chamber carried for 1/2 hour or so, and the brisket started to cool. After that, it took me 2 more hours to get to it. It ended up fine! Best brisket I’ve made in a while.

    I would say this, if your power rarely goes out, even during bad storms, I wouldn’t worry too much. I’ve got a temperature probe that will alert me for low temps, high temps, and target temps. If you look into something like that, inkbird has treated me well so far.

    You can over the flat with foil to prevent over cooking.
