First time making brisket I got the bark I wanted but the meat was drier then what I expected I pulled at 203f. I cooked at 250 the whole way through and wrapped at 180 with wagyu beef tallow.

I use a pellet smoker as well. My suggestion is, make sure you have super accurate meat thermometers and also, I take mine out at 195 max in the thickest part and then I let it rest for like 4 hours in a cooler, wrapped well.
I usually wrap the brisket at 165, but I also cook it at 225 so it has a nice bark, and then I turn the heat up 250-265 once wrapped
