I make chocolate/raspberry macs for work. Raspberry is always good but chocolate is always 👎 I use cocoa powder and they always turn out spongey.
I also had to realise in my trials and error that I was using too much liquid flavouring/colour which made 90% of my macarons crack. Even though it was what my recipe called for when I multiplied it.

Are you only using powdered sugar?
