Kept the Kamado at 275 until the steaks internal read 115. Let the steak rest then seared on the soapstone for one minute each side.

    So how does this work heat wise, do you just let the stone heat while you’re keeping it at 275, but then how to do you get it hotter for searing or don’t you need to?
