Welcome to Bonita’s Kitchen! Today we will be making a delicious Caesar Dressing and Salad. This dressing I’ve been making for many years and today I’m sharing our recipe with you…. Enjoy and Recipe is posted below!!!

Ingredients:
Dressing:
1 egg or 3 tbsp Mayonnaise 1 tbsp mustard
2 or 3 cloves of garlic, pressed 1 tbsp capers or anchovy paste Pinch pepper 1 tbsp red wine vinegar
1 tsp Worcestershire sauce 1 tbsp lemon juice
¼ cup Parmesan cheese, extra for servings
½ cup extra virgin olive oil “ more or less if needed”
1 head roman lettuce 12 each croutons
2 tbsp bacon bits 4 lemon wedges

Method:
Mix all the top ingredients together starting with the egg yolk or mayo. Mix well and add mustard, lemon juice and continue whisking by hand or electric hand held mixer. Then add pressed garlic, pepper, anchovy paste or capers, whisking continues.
Then add red wine vinegar, Worcestershire sauce, extra virgin olive oil, and parmesan cheese…fresh or bottled to make a tasty caesar dressing ( if you don’t have red wine vinegar use a vinegar of choice) then slowly mix in the EV olive oil until the dressing starts to thicken. Use a hand mixer or mixer of choice.
( Make in advance to set in fridge and for the garlic to work its magic and have a nice kick)
Method:
Clean and cut roman lettuce in bit size pieces, run cold water over lettuce and dry well.
After make homemade bacon bits or store bought.
Make homemade croutons or store bought.
Cut fresh lemon in wedges.
Add to big bowl and top with a very good helping of caesar dressing and toss together, top with extra parmesan cheese and serve with any main course meal.
Homemade Croutons:
1 or 2 slices stale bread cut in cubes, toss in 2 tbsp olive oil, sea salt and pepper to taste, garlic powder and onion powder to taste. Tossed together and put on a cookie tray and bake at 350ºf until golden brown… Use air fryer as well.
Bacon Bits:
In a frying pan add a pack of bacon or more if needed. Fry on a medium stove top heat until crisp and golden brown. Drain any oil into a bowl and after the bacon is cooked, remove from pan unto a cutting board. Let cool down and chop into small bacon bits….put in a mason jar. Keep in the fridge until all eaten. Use for salads, or recipe of choice. 
Bonita’s Tips:
I’ve used raw egg in this recipe for years and it is so tasty, you can use mayo in place of the egg.
Use red wine vinegar or white, apple cider if you wish.
Make homemade bacon bits and croutons.
Caper and anchovy paste is optional if you don’t like it.

  1. Also, you know what's in the stuff if you make it. For instance, there's supposedly wood shavings in the shaker container of Parmesan cheese…and who knows what preservatives are in foods…often salt is used as a preservative and who needs a tonne of salt in their foods? Bonita, the lemon juice in the green bottle is a different concentration (much more acidic) than a regular lemon off the tree. Also, who knows what's in the crushed garlic in jars? What's so strange to me is the croutons are generally made with stale bread…yet the stores put in a preservative to keep it fresh (???). Also, the pinker the bacon, the more nitrates in it.

  2. Yum! My homemade Caesar dressing never turns into a paste, even after being in the fridge overnight. Of course, I make mine old school with anchovies and salt minced in the bottom of the bowl, etc.. maybe I use more EVOO and vinegar., I’d have to look into the recipe. Anywho, this is my favorite salad any ever. Maybe I’d add some roasted or grilled chicken, for protein. Thank you so very much, Bonita. Have a great week ahead. 👍👍🇺🇸🥙

  6. Many years ago my sister lived in Corner Brook. I remember her giving me her recipe for Caesar salad dressing. I am so excited to say this is the recipe !!!! It must be close to 40 years of me using this recipe♥️. I moved a couple of years ago and lost some bits and pieces. Yes I lost the recipe. Bless your heart for choosing to do this dressing.
