Hi! I consider this a budget/frugal meal because I had everything on hand and besides the cost for the meat, the ingredients are relatively inexpensive. I had thawed out some sausage because I was planning on making jambalaya but husband said no thanks to rice. So we did sausage, potatoes, onion, and peppers and I always toss in a little Worcestershire sauce.

I also had a couple pounds of peaches that were getting overripe and wrinkly so I made cobbler because I hate peaches but I am a sucker for cobbler, with ice cream when we have it.

    Sausage skillet:
    ●14 oz rope sausage
    ●~1 lb yellow potatoes
    ●1 green bell pepper
    ●1/2 large red onion
    ●Dash of Worcestershire sauce

    (I didn’t add seasoning because of the sauce but also my sausage was pepper/garlic)

    Wash and dry your produce. Slice the bell pepper into strips and the onion into semi-circle slices.

    Cut your potatoes in half or quarters (depending on size) lengthwise and slice into half moons. Leave them to soak on a bowl of cold water for about 20 min so 1) they don’t brown and 2) they soften.

    When the potatoes are almost done soaking, heat a large pan on medium high heat. If you need oil, add oil. Dump the sausage in the pan and cook for about 5 min then drain and add the potatoes – they don’t need to be dried off.

    Cook those until lightly browned and some of the moisture has evaporated, then add peppers and onions and cook down. Towards the end of cooking, drizzle some Worcestershire sauce. (Sometimes I also add steak sauce!)

    Southern Peach Cobbler – found on Pinterest:

    ● 8 peaches or about 2 pounds, peeled, pit removed, and sliced [I did 8ths]
    ● 2 tablespoons + 3/4 cup sugar, divided
    ● 1 cup all-purpose flour
    ● 1 teaspoon baking powder
    ● 1 teaspoon cinnamon
    ● 1/4 teaspoon ground nutmet
    ● pinch salt
    ● 1/2 cup butter, melted
    ● 1 teaspoon vanilla

    1) Preheat oven to 350°F. While that is going, arrange peach slices in a 2-quart baking dish and line with butter (I use the stick or the paper).

    2) Sprinkle peaches with the 2 tablespoons of sugar. In a separate bowl, mix flour, 3/4 cup sugar, baking powder, cinnamon, nutmeg, and salt.

    3) Melt 1/2 cup butter and mix with vanilla. Pour butter/vanilla over dry ingredients and mix well to moisten, and you will have a cookie dough texture. With your hands, sprinkle crumb topping over peaches.

    4) Bake on middle rack for 25-30 minutes until bubbly and browned. Let rest 5 minutes before serving.
