I make a breakfast casserole by blending one egg, 100g of egg whites and half a cup of cottage cheese. Add whatever other ingredients you want (I do a layer of hash browns for 60 calories, turkey sausage and spinach.) Comes to 345 calories and 38g of protein!

I recently did this with Gordon’s scrambled eggs, and they simply become amazing. Adding them at the beginning helps give the eggs so much creaminess, and body. I honestly don’t like the taste of cottage cheese, but it just disappears into the mix, while adding the protein.
On top of a cup of white rice, it becomes one of the best breakfasts.

My nana did this for my sister and I as picky toddlers. She’d do cottage cheese, mozerella string cheese (stringed), dried parsley, salt and pepper, and topped with red or green tobasco hot sauce after its finished 😀
