1/4 cup roasted strawberries, 2 tbsps whipped topping and 1/2 a graham cracker sheet came to 115 calories, but I used a lot of sugar with my strawberries (recipe below). Next time I’m gonna half the sugar and go with nonfat Greek yogurt vs. whipped topping to see if it’s reminiscent of strawberry cheesecake (you cottage cheese-loving monsters can try that instead).

Roasted strawberries recipe:
– 1 lb strawberries
– 1/2 cup sugar *
– 1 tsp vanilla
– 1 tbsp lemon juice

Preheat the oven to 350 Fahrenheit/175 Celsius. Remove green tops from strawberries and halve them. Toss with the sugar, vanilla and lemon juice. Roast 1 hour – 1 hour 15 mins until a thick syrup forms and berries are a deep burgundy. Cool completely.
