
2 oz Lean Ground Beef (cooked, fat drained, seasoned with chilli powder or low carb taco seasoning)
1/2 Zucchini hollowed out
2 Tbsp Pico de Gallo (mix diced tomato, onion, lime juice and Cilantro)
2 Tbsp Two Good Plain Yogurt
Cilantro to garnish
- Bake hollowed zucchini at 400F for 10 minutes
- Stuff with cooked beef mixture
- Bake for additional 10 minutes
- Top with yogurt, pico de gallo, and cilantro!
You could also top with cheese, guacamole or anything else taco you want (but this will add calories)
