I can never get it right as well. I don’t think I use enough sugar.

I used the Maangchi recipe for this and it worked well first time! She used daikon for which I’m told is unusual for this dish. Typically I’m using zucchini and white potatoes.

Important to have high heat and fry the chunjang with sugar and enough fat. Looks like it’s lacking enough caramelization
