The buffalo chicken dip makes this egg salad so easy and so yum. I’m using Trader Joe’s Buffalo Chicken Dip but you can definitely use any kind that you have at your store – or make your own!

Here are the instructions:
1. Hard boil eggs by placing a pot of water, bringing to a boil, and boiling for 7 minutes
2. Once eggs are cooled, chop into small pieces
3. Dice celery
4. Mix eggs, celery, buffalo chicken dip, salt, pepper and paprika together
5. Slice bell pepper in half (as shown in the picture)
6. Toast bread
7. Top bell pepper pieces and bread with egg salad
8. No dairy? Use dairy-free pesto to make pesto egg salad. No meat? Use pesto to make pesto egg salad. No gluten? Use gluten-free bread.
