I'm milling millet with all my baking. I use about 1/4 cup to everything.
I have a waffle recipe that uses millet. I cook it for cereal but we like it creamy so I cook it in the crockpot with a ratio of 1 part millet to 4 parts water for about 4 hours. I useable lamp timer for the crock pot to come on 4 hours before breakfast.
There is also a recipe I have used for a millet casserole. The millet is baked with tomato juice, some seasonings and olives init. You bake it about .5 hours stirring about 3 times. It is a good vegetarian meal for those with celiac.
I've had this for a while! But haven't used this grain at all. Gonna try popping like popcorn and add to oats to make a granola
Just made millet yesterday!! Porridge in the oven. Very delicious. People eat it in Russia all the time in the form of porridge. I usually take 1 part millet to 3 parts liquid (I mix milk with water), add salt, honey/sugar, butter. Then bake in the oven, first covered, then uncovered, until it’s ready. I also make it on the stove top, but oven version tastes better, in my opinion.
Forgot to add that before cooking, I wash the millet several times and soak in very hot water (boiling) for 10 minutes, then strain. This process removes bitterness, sometimes millet has some bitterness. Also, when choosing millet, go for the most yellow grain. Most yellow means most fresh.

I've made millet porridge but wasn't a fan. I really like using about 1/4 cup in a standard muffin recipe. It gives a bit of crunch that I find interesting. I think it might be a good option for someone wanting texture but doesn't like or want to use nuts. And of course, in Ezekiel Bread, which is why I purchased it initially. I like the idea of adding it to granola and popping it!! Thanks for the inspiration!

I add a little ground millet into my sourdough spelt bread. Love it!
I put whole millet in my banana bread. Zucchini bread and my granola. We love the crunch it gives. I also use it instead of sesame seeds on my burger buns.
