I find the meats to be the most time-consuming portion of meal prepping. So made about 6lbs of meat for burrito bowls and pastas this week. (I’ll make the pasta or rice for dinner fresh and have leftovers for lunch. Add whatever mix-ins I want, they take no time) homemade salsa and watermelon sounded delicious, so added those in!

    Homemade salsa:

    1.5 lbs Roma tomatoes

    1 bunch green onions, cut

    1 bunch cilantro

    1/2 yellow onion

    1-2 jalapeño, depends on preference

    Juice of 1/2 lime (mine I small, so I did 1 lime)

    3 cloves garlic

    1 TBS cumin, salt, sugar (I used monkfruit)

    Quartered the tomatoes, halved the jalapeños, peeled and cut up the onions, and picked the cilantro. Put it all in a food processor and pulsed. Strained the excess water.

    Meats will be used for burrito bowls and pasta dinners. I make the rice/pasta fresh for dinner and take leftovers for lunch the next day. I find the carbs always reheat poorly after a few days, but the meats are fine (especially chicken thighs). So this is my personal adjustment for prepping!
