Apparently it’s made with American bacon, eggs and cream. So the current Italian version came much later. And it’s to force ppl to buy Italian ingredients of guanciale when it’s nothing but a gimmick

    While it’s possible that the origin of the dish was an American soldier who was given cacio e Pepe and added his own rations to the dish by the time it was added to an Italian menu as carbonara it would have been changed by the cooks to balance it and use local ingredients.

    There are many Italian recipes that work off the cacio e Pepe base and they would not use cream.

    just because some ignorant fuck threw his powdered eggs and cream into his dinner doesn’t make spaghetti allá powdered rations “the authentic” dish even if it was the inspo.
