It’s beans. The secret ingredient is beans. Yeah… no you don’t taste it. Just rinse them very well and you should be good!
Few weeks back I was craving some brownies. I remember seeing people making brownies using beans. I watched and read a lot of recipes. They looked good but I didn’t really like some of the ingredients they use or macros well meh. So I just made my own version. I made some with black beans. (Again you don’t taste them. Rinse them beans well!) I was skeptical but they came out pretty good. Surprisingly very “fudgey”; dense. Closes to what I got to real brownies texture wise imo. It got me thinking, with a few substitutions can I make blondies? Well here we are! 1 square corner is close to 200 calories (the ones with chocolate chips will be an extra 42 calories each)
Ingredients:
1 can (drained and well rinse) or 240g of cooked white beans
2 large eggs
2 tbps / 32g Peanut butter
1/4 cup / 60mg unsweetened almond milk
1/2 cup / 50g of oat flour
Half a scoop / 16g of vanilla protein powder
12 tbps / 50g Brown sugar sweetener
12 tbps / 50g sweetener
3g baking powder
Dash of salt
Instructions:
Preheat oven 350F for 10 mins
If you have good blender then you can add everything in it and blend until everything is well incorporated
If you don’t then I first suggested adding all dry ingredients, blend, then add to mixing bowl. After add wet ingredients to blender and blend. Add to dry ingredients and mix. Greased or line parchment paper on 8×8 dish (I used a silicone dish), pour batter into dish (feel free to add some toppings) and bake for 20-25 mins. I found the sweet spot for me is 22 mins. Cool for about 30 mins and enjoy. I like my brownies chill so I store them in the fridge overnight to eat them.
Notes: These taste lightly sweet. I don’t mind but if you want more sweetness definitely add more sweetener. My protein powder isn’t that sweet to begin with (ON vanilla ice cream) so that can be another factor.
Also I think adding a little bit of vanilla extract would help the flavor profile
You can use other nut butter if you’re allergic to peanuts. I didn’t taste any peanut flavor in case you were wondering.
