I found a keto pizza recipe and tried it today. I found it pretty decent. If you have enough from thuna or cauliflower pizza dough this could be for you.
You'll need:
For the dough
100 gram powdered almond
200 gram grated mozzarella
2 Tbsp cream cheese
1 egg
1 tsp garlic granule
1/4th tsp salt
For the topping
2 Tbsp tomato paste
200 gram grated gouda
1 garlic clove + 1 Tbsp olive oil
Additions such as salami, olives, pepperoni to liking
Oregano
First you put the mozzarella and the cream cheese in a microwave safe dish and mix it around. Microwave it for about 90 seconds. If there is no microwave available you can just heat it in a pot until it melted.
Next add the almond powder, the egg, the garlic granule and the salt. Mix thoroughly, first with a fork, then with your hand.
Put 2 sheets of baking paper on top of each other onto the baking sheet. Pour the dough into the center. Put a large sheet of plastic wrap over it. Next flatten the dough with your hands. You could use a rolling pin afterwards but I didn't need to. The plastic wrap is relevant so nothing sticks to your hands or pin.
Heat your oven to 200 degrees C using circulating air. Bake the dough for at least 5-7 minutes. (I didn't do that. I was dubious about the consistency so I gave it another 5 minutes.)
Next the recipe says to turn the dough around. That's what the 2 layers of baking paper are for. This step is optional and I didn't risk ruining the crust.
Mix the tomato paste with water and spread it over the pizza. I needed to use 3 Tbsp paste instead of 2. Probably didn't add enough water.
Cut up the garlic clove and mix it with a little olive oil and spread it over the pizza. This step is optional.
Add remaining toppings to liking and bake the pizza for another 10 minutes.
The result has potential. I forgot to add part of the almond and it was a little soft because of that probably. Once it cooled down somewhat it had pizza like consistency however.
This pizza is enough to serve 2 people 2 large, filling pieces each. One quarter has about 740 calories, 58g fat, 8.5g net carbs, 43g protein and can serve as a meal by itself.
