Welcome back to our channel! Today, I’m excited to share with you one of my favorite go-to appetizers that’s perfect for any occasion—Antipasto Skewers! These skewers are a delightful twist on the classic antipasto platter, combining all the best flavors into convenient, bite-sized portions.

Whether you’re hosting a dinner party, planning a picnic, or just need a quick and easy snack, these Antipasto Skewers are guaranteed to impress your guests. They’re colorful, full of flavor, and incredibly simple to make. The combination of juicy cherry tomatoes, creamy mozzarella balls, savory salami, briny olives, and fresh basil creates a delicious harmony of tastes that will have everyone reaching for more.

Ingredients:
– 20 cherry tomatoes
– 20 mini mozzarella balls (bocconcini)
– 20 slices of salami (folded into quarters)
– 20 large pitted olives (green or black)
– 20 fresh basil leaves
– 1 tablespoon of extra virgin olive oil
– 1 tablespoon of balsamic glaze (optional)
– Freshly cracked black pepper to taste
– 20 wooden or bamboo skewers

Instructions:

1. Prepare the Ingredients:
– Rinse and dry the cherry tomatoes and basil leaves.
– Drain the mini mozzarella balls and pat them dry with a paper towel.
– If your olives have pits, make sure to remove them beforehand. You can use either green or black olives, depending on your preference.
– Fold each slice of salami into quarters, creating a compact and neat piece that will easily fit onto the skewer.

2. Assemble the Skewers:
– Take a wooden or bamboo skewer and start by threading one cherry tomato onto it.
– Follow with a mini mozzarella ball, then a folded slice of salami, a large olive, and finally a fresh basil leaf.
– Repeat this pattern until all the ingredients are used up. Each skewer should have a balanced mix of each ingredient.

3. Season and Serve:
– Arrange the skewers on a serving platter.
– Drizzle the assembled skewers with a little bit of extra virgin olive oil and, if you like, a touch of balsamic glaze for added sweetness and depth of flavor.
– Finish with a sprinkle of freshly cracked black pepper to enhance the taste.
– Serve immediately, or refrigerate until ready to serve. These skewers can be made a few hours ahead of time, making them a great option for entertaining!

These Antipasto Skewers are as versatile as they are delicious. You can easily swap out ingredients based on your taste preferences or what you have on hand. Try using marinated artichoke hearts, roasted red peppers, or even different types of cheese like provolone or asiago. The possibilities are endless!
