Wanted to make this after having it a couple times in Alon Shaya’s restaurants. Unfortunately don’t have a grill as I’m in a condo, but tried the broiler with salad-spinner method and it was delicious. I would only say that for me the parsley could have been very finely chopped, and I may have scaled it down a bit. Great overall though and pretty low effort.

I don’t like eggplant but I would try that. It looks yum 😋
